Skumsvampar are moulded as tiny toadstools: a pale foam stalk under a coloured, fruit-flavoured cap. The texture is pure skum — it gives, then vanishes — and the two-tone moulding means each one carries a mild fruit note on top of a vanilla-ish base. They have been sold by the scoop in Swedish sweet shops for generations, and they remain one of the shapes Swedes abroad ask for by name.
